  • 2 cups fresh strawberries, diced if out of season, use frozen (drain excess water)
  • 1/4 cup sugar adjust based on the strawberries’ sweetness
  • 1 tablespoon lemon juice for a bright, tangy kick
  • 1 teaspoon vanilla extract
  • 3 tablespoons additional melted butter to enrich the strawberry layer

Instructions
 

  • Preheat your oven to 350°F (180°C) and lightly grease an 8x8 inch square baking pan.
  • In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, salt, and cinnamon. Stir until well blended.
  • Add the melted butter to the dry mixture and stir until it forms a cohesive mixture.
  • Press the oat mixture firmly into the prepared pan to create an even base.
  • In another bowl, toss the diced strawberries with sugar, lemon juice, and vanilla extract, then stir in the additional melted butter.
  • Spread the strawberry mixture evenly over the oat base and add a few whole strawberry slices on top if desired.
  • Bake in the preheated oven for 25 to 30 minutes, until the topping is slightly golden and edges pull away from the pan.
  • Allow the bars to cool completely in the pan before cutting into squares.
