  • 3 lbs sweet potatoes peeled and cut into even pieces
  • 8 tbsp unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup dark brown sugar
  • 2 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 0.25 tsp ground cloves
  • 2 tsp vanilla extract
  • 1 cup mini marshmallows for topping, optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whisk together the melted butter, granulated sugar, dark brown sugar, cinnamon, ginger, nutmeg, salt, cloves, and vanilla extract until smooth.
  • Add the sweet potatoes to the glaze and toss until evenly coated.
  • Spread the coated sweet potatoes in a 9×13 inch baking dish and cover with foil.
  • Bake for 40 minutes, then remove the foil and bake for another 20–25 minutes, until the sweet potatoes are tender.
  • Top with mini marshmallows and bake for an additional 10–15 minutes, until golden and bubbly.
