Ingredients
  

  • 1 medium head of cauliflower grated or processed into rice
  • 2 large eggs
  • 1 ½ cups of mozzarella cheese shredded
  • ½ teaspoon of salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil optional
  • Black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate or process the cauliflower into rice-like pieces.
  • Microwave the cauliflower rice for 5-6 minutes until soft. Let it cool slightly, then squeeze out as much water as possible using a cheesecloth or clean towel.
  • In a bowl, mix the cauliflower, eggs, cheese, and spices.
  • Spread the mixture evenly on the prepared baking sheet, forming a thin crust.
  • Bake for 20-25 minutes or until the crust is golden and crispy.
  • Add your favorite toppings and bake again until the cheese is melted and bubbly.
