  • 150 g fresh lump crab meat Dungeness, blue, or king crab
  • 6 large egg yolks
  • 2 cups heavy cream
  • 1/4 cup granulated sugar for custard
  • 2 tbsp granulated sugar for caramelizing
  • Salt and pepper to taste
  • Optional: Truffle oil or citrus zest for added flavor complexity

Instructions
 

  • Preheat oven to 325°F (165°C).
  • Whisk together egg yolks and sugar in a bowl until pale and creamy.
  • Slowly whisk in heavy cream, ensuring no lumps.
  • Gently fold in crab meat to maintain the texture.
  • Pour the mixture into ramekins and place them in a water bath.
  • Bake for 30-40 minutes or until the custard is just set.
  • Chill for 2 hours before caramelizing the top.
  • Sprinkle a thin layer of sugar on top and caramelize with a kitchen torch or broiler.
