  • For the Soup:
  • 2 tablespoons butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup sauerkraut drained
  • 2 cups corned beef diced or shredded
  • 4 cups chicken broth or beef broth for a richer flavor
  • 2 medium potatoes diced
  • 1 cup heavy cream
  • 1 cup Swiss cheese shredded
  • Salt and pepper to taste
  • For Garnish optional:
  • Rye bread croutons
  • Fresh dill chopped
  • Additional shredded Swiss cheese

Instructions
 

  • Prepare Ingredients: Chop onions, mince garlic, dice potatoes, and shred Swiss cheese. Drain sauerkraut and dice corned beef.
  • Sauté Aromatics: In a large pot, melt butter over medium heat. Add onions and sauté for 3-4 minutes until translucent. Stir in garlic and cook for 30 seconds.
  • Cook the Base: Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes, until potatoes are tender.
  • Add Reuben Ingredients: Stir in sauerkraut and corned beef. Simmer for 5-7 minutes to combine flavors.
  • Make It Creamy: Reduce heat to medium-low and slowly stir in heavy cream. Gradually add shredded Swiss cheese, stirring constantly until fully melted.
  • Season and Serve: Taste and adjust with salt and pepper. Ladle into bowls and garnish with rye croutons, fresh dill, or additional cheese.

Notes

Substitutions:
For dairy-free, use coconut cream and nutritional yeast instead of heavy cream and Swiss cheese.
