Ingredients
  

  • For Low Carb Pizza Base 4 servings
  • 1 1/2 cups almond flour
  • 1 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 egg
  • 1 tablespoon olive oil
  • Optional: 1 teaspoon psyllium husk for better structure
  • For Low Carb Pizza Sauce
  • 1 cup tomato passata
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon basil
  • Salt and pepper to taste
  • For Low Carb Toppings Optional
  • 1/2 cup shredded mozzarella cheese additional for topping
  • 1/4 cup crumbled feta or goat cheese
  • 1/4 cup sliced pepperoni or Italian sausage
  • 1/4 cup mushrooms sliced
  • 1/4 cup zucchini julienned
  • Fresh basil or baby spinach leaves

Instructions
 

  • For the Low Carb Pizza Base:
  • Preheat the oven to 450°F (230°C).
  • In a medium bowl, mix together almond flour, mozzarella cheese, cream cheese, and olive oil. Add the egg and psyllium husk (if using) and knead the mixture until a dough forms.
  • Roll out the dough between two pieces of parchment paper into your desired pizza shape, about 1/4 inch thick.
  • Place the crust on a parchment-lined baking sheet or pizza stone and bake for 5-7 minutes to par-bake the crust.
  • Remove the crust from the oven and set it aside.
  • For the Low Carb Pizza Sauce:
  • In a saucepan, combine tomato passata, garlic powder, oregano, basil, and salt and pepper.
  • Simmer on low heat for 10 minutes, stirring occasionally, until the sauce thickens slightly.
  • Let the sauce cool slightly before spreading it on the pizza base.
  • For Assembling and Baking the Pizza:
  • Preheat the oven again to 425°F (220°C).
  • Spread a layer of low-carb pizza sauce over the par-baked crust.
  • Top with shredded mozzarella cheese, meat toppings (pepperoni, sausage), and vegetables (mushrooms, zucchini, spinach), as desired.
  • Bake the pizza for 10-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
  • Remove the pizza from the oven and let it cool for 5 minutes before slicing and serving.
