Ingredients
  

  • Salad Base:
  • 4 cups fresh spinach leaves washed and dried
  • 1 cup mixed leafy greens arugula, kale, or frisée for variety
  • ½ cup thinly sliced radishes
  • 1 cup cooked quinoa or farro
  • 1 avocado sliced
  • ½ cup cherry tomatoes halved
  • ½ cup roasted chickpeas or nuts e.g., almonds or sunflower seeds
  • Prep-Ahead Vegetables:
  • 1 cup Brussels sprouts or cauliflower roasted
  • 1 medium sweet potato diced and roasted
  • Protein Options:
  • 1 cup grilled chicken breast sliced (for non-vegetarian option)
  • ½ cup crumbled feta or goat cheese optional
  • Dressing:
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions
 

  • Prep the Ingredients:
  • Preheat oven to 400°F (200°C).
  • Roast Brussels sprouts or cauliflower and diced sweet potatoes on a baking sheet with olive oil, salt, and pepper for 20–25 minutes or until golden and tender. Set aside to cool.
  • Prepare the Quinoa or Farro:
  • While the vegetables are roasting, cook 1 cup of quinoa or farro according to package instructions. Let it cool before adding to the salad.
  • Assemble the Salad Base:
  • In a large salad bowl, combine spinach leaves, mixed greens, radishes, cherry tomatoes, roasted chickpeas or nuts, and avocado slices. Add the roasted veggies and cooked quinoa or farro.
  • Prepare the Dressing:
  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and honey or maple syrup. Season with salt and pepper.
  • Add Protein & Toppings:
  • Add grilled chicken slices (if desired), and sprinkle crumbled feta or goat cheese on top.
  • Drizzle and Serve:
  • Pour the dressing over the salad, toss gently to coat, and serve immediately.
