Ingredients
  

  • 6 large eggs hard-boiled and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1/4 cup dill pickles finely chopped
  • 1 tablespoon pickle juice
  • 1/4 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon chopped fresh dill

Instructions
 

  • Hard boil the eggs, peel, and chop them into small pieces.
  • In a mixing bowl, combine mayonnaise, mustard, pickle juice, salt, and pepper. Mix well.
  • Add the chopped eggs and pickles to the bowl. Gently fold until all ingredients are well combined.
  • Adjust seasoning to taste, adding more salt or pickle juice if desired.
  • Serve immediately in a sandwich, on crackers, or in a lettuce wrap.

Notes

You can substitute dill pickles with sweet pickles for a slightly different flavor.
Add chopped celery for extra crunch or fresh herbs like parsley for added freshness.
Best served fresh but can be refrigerated in an airtight container for up to 3 days.
