Ingredients
  

  • For the Falafel:
  • 1 lb 450g dried chickpeas, soaked overnight
  • 1 onion finely chopped
  • 3 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Vegetable oil for frying
  • For the Wrap:
  • Whole wheat flatbreads or pita pockets
  • Veggies lettuce, tomatoes, cucumbers, red onion
  • Tahini sauce recipe below
  • For the Tahini Sauce:
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 2 garlic cloves minced
  • 1/4 cup water
  • Salt to taste

Instructions
 

  • Prepare the Falafel:
  • Drain and rinse the soaked chickpeas. In a food processor, mix the chickpeas, onion, garlic, cumin, coriander, and baking soda. Blend until the mixture is coarse but well combined. Add salt and pepper to taste.
  • Shape the Falafel:
  • Shape the chickpea mixture into small balls or patties, about 1-2 inches in diameter.
  • Fry the Falafel:
  • Heat 1-2 inches of vegetable oil in a skillet or Dutch oven to 350°F (175°C). Fry the falafel in batches for 2-3 minutes until golden and crispy. Drain on a paper towel-lined plate.
  • Make the Tahini Sauce:
  • In a small bowl, mix the tahini, lemon juice, minced garlic, water, and salt. Stir until smooth and creamy.
  • Warm the Flatbreads:
  • If desired, warm the flatbreads or pita pockets in a skillet or microwave for a soft, pliable texture.
  • Assemble the Wrap:
  • Place the crispy falafel inside the flatbread along with your choice of fresh veggies. Drizzle with the tahini sauce, wrap it up, and enjoy your delicious falafel wrap!

  • Soak the Chickpeas: Soak dried chickpeas overnight for the perfect texture.
