  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder optional
  • 2 large eggs
  • 1 cup panko breadcrumbs or regular breadcrumbs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Oil for frying canola, vegetable, or peanut oil

  • Dipping sauces: tartar spicy mayo, honey mustard

  • Preparation
  • Prepare the Salmon
  • Rinse and pat the salmon fillet dry.
  • Remove any pin bones and cut the salmon into 1–2 inch bite-sized pieces.
  • Marinate the Salmon
  • In a bowl, combine lemon juice, olive oil, salt, and black pepper. Toss the salmon bites to coat evenly. Let marinate for 15–30 minutes.
  • Make the Batter
  • In a bowl, whisk together flour, cornstarch, baking powder, salt, paprika, and garlic powder.
  • Gradually add cold water or club soda until the batter reaches a smooth, pancake-like consistency.
  • Set up a breading station with separate plates for the batter and panko breadcrumbs.
  • Frying the Salmon Bites
  • Heat oil in a frying pan or deep fryer to 350°F (175°C).
  • Dip each salmon piece into the batter, then coat with breadcrumbs.
  • Fry in small batches for 3–4 minutes per side until golden and crispy.
  • Remove and drain on paper towels.
  • Serving
  • Serve hot with dipping sauces, lemon wedges, and garnishes. Enjoy!
