Ingredients
  

  • For the Marinade:
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 garlic cloves minced
  • 2 tbsp Greek yogurt
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • For the Chicken:
  • 2 large chicken breasts or thighs, boneless and skinless, cut into 1.5-inch cubes
  • Skewers wooden or metal

Instructions
 

  • Prepare the Marinade:
  • In a large mixing bowl, combine olive oil, lemon juice, garlic, Greek yogurt, cumin, smoked paprika, salt, and pepper.
  • Whisk everything together until well combined.
  • Marinate the Chicken:
  • Add the chicken cubes to the marinade, ensuring all pieces are well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight, to allow the flavors to infuse.
  • Prepare the Skewers:
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  • Preheat the Grill:
  • Preheat your grill to medium-high heat (around 375°F to 400°F). Lightly oil the grill grates to prevent the chicken from sticking.
  • Grill the Chicken Skewers:
  • Place the skewers on the preheated grill and cook for about 10-12 minutes, turning them occasionally to ensure even cooking on all sides.
  • Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (75°C).
  • Serve:
  • Remove the chicken skewers from the grill and let them rest for a few minutes before serving.
  • Serve hot with your favorite sides such as tzatziki sauce, Greek salad, or grilled vegetables.

Notes

Marinating Tip: The longer you marinate the chicken, the more flavorful it will be. Aim for at least 2 hours, but overnight is best.
Skewers: If using wooden skewers, don’t forget to soak them to prevent them from burning on the grill.
Cut of Chicken: You can use either chicken breasts or chicken thighs. Thighs tend to be juicier and more forgiving on the grill.
