Ingredients
  

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • 1 tsp smoked paprika plus more for garnish
  • Salt and pepper to taste
  • Chives cut into small pieces, for the “pumpkin stems”
  • Orange food coloring optional, for a pumpkin-like color

Instructions
 

  • Boil the eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and let the eggs sit in the hot water for 10 minutes. Drain, cool under cold running water, and peel the eggs.
  • Prepare the filling: Slice the eggs in half lengthwise and carefully remove the yolks. Place the yolks in a bowl and mash them with a fork. Add mayonnaise, Dijon mustard, white vinegar, smoked paprika, salt, and pepper. Mix until smooth and creamy.
  • Add color (optional): If you'd like to give the filling a pumpkin-like color, stir in a few drops of orange food coloring until the desired shade is reached.
  • Fill the egg whites: Using a spoon or piping bag, fill the hollowed-out egg whites with the yolk mixture, creating a rounded "pumpkin" shape on top.
  • Create pumpkin ridges: Use a toothpick to gently draw lines in the filling to mimic the ridges of a pumpkin.
  • Add the stem: Place a small piece of chive in the center of each deviled egg to resemble a pumpkin stem.
  • Garnish and serve: Lightly sprinkle the tops of the deviled eggs with extra smoked paprika for added color and flavor. Serve immediately and watch them disappear!
