Ingredients
  

  • For the Chicken:
  • 2 large boneless skinless chicken breasts (or 4 chicken thighs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp cumin
  • For the Vegetables:
  • 1 cup baby potatoes halved
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • For Garnish & Serving:
  • Fresh parsley or cilantro chopped
  • Lemon wedges
  • Serve with rice quinoa, or a side salad

Instructions
 

  • Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper or foil for easy cleanup.
  • Prepare the chicken: In a small bowl, mix paprika, garlic powder, onion powder, oregano, cumin, salt, and pepper. Rub the chicken with olive oil, then coat it with the seasoning mix.
  • Prepare the vegetables: In a separate bowl, toss the potatoes, bell peppers, onions, and broccoli with olive oil, Italian seasoning, salt, and pepper.
  • Arrange everything on the sheet pan: Place the chicken in the center and spread the vegetables around it in an even layer.
  • Roast in the oven for 25-30 minutes, flipping the veggies halfway through, until the chicken reaches an internal temperature of 165°F (75°C).
  • Garnish & serve: Squeeze fresh lemon juice over the dish and top with chopped parsley. Enjoy with your favorite side!

Notes
