Ingredients
  

  • For the Baked Potatoes:
  • 4 medium Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • For the Shrimp:
  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • For Toppings:
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped chives
  • Optional: bacon bits hot sauce, parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Wash and dry the potatoes. Pierce each potato with a fork several times to allow steam to escape.
  • Rub the potatoes with olive oil and sprinkle with sea salt.
  • Bake directly on the oven rack for 50-60 minutes, or until the skins are crispy and the insides are tender.
  • Cook the Shrimp:
  • In a bowl, toss the shrimp with olive oil, garlic, paprika, lemon juice, salt, and pepper.
  • Heat a skillet over medium heat and sauté the shrimp for 2-3 minutes per side, or until pink and opaque. Set aside.
  • Assemble the Baked Potatoes:
  • Slice each baked potato open lengthwise and fluff the insides with a fork.
  • Add a dollop of sour cream, sprinkle with shredded cheese, and top with the cooked shrimp.
  • Garnish with chopped chives, bacon bits, or parsley as desired.
