Ingredients
  

  • 1 1/2 cups Arborio rice
  • 1 tablespoon olive oil or butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1/2 cup white wine
  • 4 cups chicken or vegetable stock warmed
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup heavy cream
  • 5 ounces smoked salmon cut into strips
  • 1 tablespoon fresh dill or parsley chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil or butter in a large pan over medium heat. Add chopped onion and garlic; cook until softened.
  • Stir in Arborio rice and toast for 1-2 minutes until slightly translucent.
  • Deglaze the pan with white wine, stirring until evaporated.
  • Add stock one ladle at a time, stirring constantly and allowing each ladle to absorb before adding more.
  • Cook for 18-20 minutes, or until the rice is al dente.
  • Fold in smoked salmon, Parmesan cheese, and heavy cream. Mix gently to combine.
  • Season with salt and pepper to taste.
  • Garnish with fresh dill or parsley and serve immediately.

For a lighter option, replace heavy cream with low-fat milk or omit altogether.
