Ingredients
  

  • 4 slices of sourdough bread
  • 4 Medjool dates pitted and chopped
  • 2 tbsp butter softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp red chili flakes adjust to taste
  • 1 tbsp honey
  • 1 tsp olive oil
  • A pinch of salt

Instructions
 

  • Prepare the Cheese Mixture
  • In a bowl, combine the shredded cheddar and mozzarella cheese. Mix in the red chili flakes for a spicy kick.
  • Butter the Bread
  • Spread softened butter on one side of each bread slice. The butter will give the bread a golden and crispy finish when grilled.
  • Assemble the Sandwiches
  • On the non-buttered side of two bread slices, layer the cheese mixture evenly. Add the chopped Medjool dates on top of the cheese for a touch of sweetness, then drizzle with honey.
  • Grill the Sandwiches
  • Heat a skillet over medium heat and add a teaspoon of olive oil. Place the sandwiches in the skillet, buttered side down. Grill for 3-4 minutes on each side, pressing down lightly with a spatula, until the bread is golden brown and the cheese is melted.

Notes

For a milder flavor, reduce the chili flakes or substitute with smoked paprika.
