  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder

  • ¼ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup milk
  • ½ cup hot water
  • For the ghost frosting:
  • 2 cups marshmallow fluff
  • ½ cup unsalted butter softened
  • 2 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk if needed for consistency
  • For decorating:
  • Black edible marker or melted chocolate for eyes and mouth

Instructions
 

  • Prepare the cupcakes: Preheat the oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  • Mix dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Mix wet ingredients: In another bowl, beat the eggs, oil, vanilla extract, and milk. Gradually add the wet mixture to the dry ingredients, stirring until combined.
  • Add hot water: Slowly stir in the hot water until the batter is smooth. It will be runny, but that’s normal.
  • Bake: Pour the batter into the prepared cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  • Make the ghost frosting: In a large bowl, beat the marshmallow fluff and softened butter until smooth. Gradually add powdered sugar, vanilla extract, and a little milk (if needed) to achieve a fluffy consistency.
  • Decorate the cupcakes: Use a piping bag fitted with a large round tip to pipe the marshmallow frosting into ghost shapes on top of each cupcake. Add spooky eyes and a mouth using either an edible marker or melted chocolate.
